The recipe of the month from Marie Desandre Navarre, our very own kite surfer

This month, Marie Desandre Navarre, professional kite surfer, tells us more about her own recipe of Chocolate Coconut Quinoa bars.

Chocolate bars with Quinoa and Coconut butter

Finally delicious cereal bars packed with nutritional goodness!


The Quinoa

Quinoa comes from South America where it has been grown for thousands of years. It looks like a cereal and is eaten like a cereal, but in reality it is a member of the Chenopodiaceae plant family, like spinach and beetroot.
Quinoa is made from 70% carbohydrate and 15% protein, as well as some fatty acids, fibr and minerals. It contains more protein than a cereal and also contains all the essential amino acids (AAE). The advantage is that it also does not contain any gluten.

The Coconut butter

The Coconut butter is a good alternative to the ordinary butter used in pastries. Taken from the coconut plant, coconut butter or coconut oil is rich in energy, fatty acids, fibre (11.7g/100g average) and calcium (12.6mg/100g average).

Healthy recipe: Quinoa Cocao coco bars

To make these delicious Chocolate Coconut Quinoa bars, you will need:

Ingredients
  • 5 tablespoons of coconut butter
  • 4 tablespoons of sugarless chocolate
  • 2 tablespoons of Agave nectar
  • 1 pinch of salt
  • 1 glass of quinoa
  • Cranberries, pistachios, walnuts or pumpkin seeds and coconut flakes.

Instructions

Pour the coconut butter and chocolate into a salad bowl and stir them well.
Cut the cranberries, pistachios and nuts into small pieces.
Gradually add the rest of the ingredients in small doses.
Stir once more until it forms a thick dough.
Make bars out of the dough.
Leave them to rest in the fridge for at least two hours.


After two hours you can eat as many Chocolate Coconut Quinoa bars as you like!
You can even vary the recipe according to your taste, as long as you retain the basic ingredients of coconut butter and quinoa.
